The chef recently bought the historic Rockley Pub and adjoining property with big plans to promote the small town in NSW.

“A lot of people think I’m crazy because Rockley is a very quiet little village,” he laughs. “But with COVID, people want a little more out of Sydney and are looking for experience.”

He is planning a new restaurant, sandstone cellar, bar in the old adjoining courthouse with pub lunches, a large beer garden and outdoor area, as well as nine renovated rooms on the upper floor with a bathroom.

In addition, he wants to build 14 luxury villas in his new block next door, open a bakery or general store, and give a real lifeline to the city where his ancestors married and lived nearby.

“I like the idea of ​​maybe 20 years from now looking back and thinking what a thriving city and maybe I had something to do with it,” he says.
