Ember is the signature addition to Oceania’s dining options. The Ember is open for lunch and dinner and offers a menu of inventive American creations mixed with time-honored classics.

The menu includes dishes such as braised short ribs on polenta, grilled swordfish with asparagus, crab cakes with spicy aioli, and a cobb salad with smoked chicken.

Aquamar Kitchen presents a new perspective on food and the pursuit of wellness. Whether you are a die-hard foodie who eats almost anything or if you have subscribed to a specific culinary lifestyle, Aquamar Kitchen offers a plethora of guilt free choices.

Breakfast includes cold-pressed raw juices and superfood smoothies, hearty homemade granolas, avocado toast, organic power bowls and hearty breakfast wraps.

Dozens of healthy dishes are available for lunch, such as slow-roasted organic salmon with quinoa tabbouleh and lemon tahini, yellow fin tacos with cabbage salad, or even a crunchy chicken sandwich on a freshly baked whole grain bun.

The great dining room

The Grand Dining Room is exactly what it sounds like – a Grand Dining Room.

The unique dining experience has always featured a selection of continental dishes and now a new range of options is also offered. The selection includes everything from signature Jacques Pépin classics to a spectrum of global flavors to a brand new tasting menu from the chef. The menus in The Grand Dining Room change daily.

Polo grill

Polo Grill will be Vista’s classic steakhouse, with rich decor and an abundance of custom mill work paired with white linen tablecloths and black waiters.

All beef dishes served in the Polo Grill are dry-aged for 28 days and certified according to Black Angus USDA Prime. Seafood classics like swordfish and lobster au gratin from across Maine are also on the menu.

Tuscany

Toscana presents a further development of the Tuscan cuisine in an authentic Italian-inspired ambience. Many of the Italian recipes in Oceania come from the mothers and grandmothers of their own Italian kitchen staff.

The masterfully prepared dishes are presented on elegant, custom-made Versace porcelain and embody the essence of Tuscany. You can choose from hand-rolled gnocchi with pesto, risotto with lobster medallions and shallots and pan-fried sea bass fillet with Sorrento lemon, Chardonnay and capers.

Red ginger

Red Ginger evokes the audacity and subtleties of the Pan-Asian dishes created by the chefs of Oceania.

The specialties with Thai, Korean, Japanese and Malaysian roots are a combination of spicy and calming, hearty and sweet to please just about everyone. The dishes include a spicy roast duck salad, beef penang with coconut rice and paratha roti, and Thai vegetable curry with sweet potatoes, aubergines, mushrooms and basil in a green curry sauce.

The Terrace Café is the ship’s informal buffet and has both indoor and outdoor seating.

The dishes change daily and also include Oceania’s typical Chef’s Market Dinners with locally inspired specialties from various ports of call along the route.

Waves Grill is a casual, colorful setting to enjoy typical American specialties. Located in a spacious, shaded area near the pool, the venue serves things like gourmet burgers, fries, seafood, sandwiches, salads, and desserts in an open galley.

Waves Grill is open from noon to late afternoon.

The culinary center

The Culinary Center is where passionate cooking teachers share their perspectives on culture and cuisine through the lens of food and wine. Here, passengers can take part in practical instructions and then enjoy their creations in the new Culinary Center Dining Room with a sea view.

Culinary experiences are also offered in the dining room of the Culinary Center.

Private

Priveé is Oceania Cruises’ marquee for intimate culinary celebrations for a maximum of 10 guests.

Backlit, embossed walls and a blooming petal ceiling, from which a chandelier hangs over the marble dining table, set the stage for an elegant and unforgettable evening. A wall of floor to ceiling windows offers beautiful ocean views to complete the private dining experience.

Baristas

Baristas offers passengers a breathtaking 270 degree sea view while they sip illy espressos, cappuccinos and lattes. Pastries, finger sandwiches and homemade biscotti are also available in the chic café.

Just a few steps away from the baristas is the new bakery with freshly baked French and Italian pastries such as chocolate-almond croissants and sweet bombolini. The library is also nearby, a perfect place to stop for coffee and pastries.

Oceania’s Vista is slated to hit the market in early 2023. The opening season of the ship begins on September 9, 2021 and will be bookable on September 15, 2021.
