During successive lockdowns, hotels, restaurants and bars created countless new drinks to offer to their online customers. Adare Manor in Co. Limerick has worked with Midleton Distillery in the past and released two single cask whiskeys. Now the two have teamed up to create the Adare Manor Fig Gin.

Inspired by the botanical fruits, herbs, and figs found in the property’s walled garden, this is a one-off bespoke gin, and yes, it’s flavored with figs, along with 16 other botanicals including black lemon and gorse flowers.

The Adare Manor Garden Gin Fig Edition starts with a strong citrus peel with floral notes. On the palate it is earthy, creamy and structured with a hint of honey and an unmistakable spicy finish. Notes of fig and juniper can also be found in this warming and very attractive gin. As a serving suggestion, 40 ml gin, 120 ml Mediterranean tonic water, half a ripe fig, three basil leaves and a lemongrass stick are served with lots of ice. The gin is available from shop.adaremanor.com for 95 €.

The Westbury Hotel in Dublin has also released the Sidecar Dublin Dry Gin, made in collaboration with the Stillgarden Distillery in Inchicore. The botanicals include wild lemon verbena, nettles and herbs from the region, as well as ginger, bitter orange and the indispensable fresh juniper. This is a subtle, carefully crafted gin. It was developed for Westbury’s cocktail bar and is available online for € 50 shop.doylecollection.com.
