As an award-winning Food & Beverage Guide, Chef Peterson is ready to lead the way in the city’s culinary scene and oversee the vibrant culinary landscape throughout the hotel.

With a proven track record of successful innovative concept creation and customer experiences, Chef Peterson has opened 55 hotels and 132 restaurants around the world. Over the course of his career, Chef Peterson has been an active advocate of the organic and sustainable food and beverage movement, passionately supporting immigrant farmers and their concerns. Chef Peterson was most recently the main owner and operator of Collaborative Kitchen & Culinary Concepts. He is a celebrated chef who has led food and beverage teams at Starwood Hotels and Resorts, OTG, Faena Group, Caesars Entertainment, and others.

In his role as Executive Chef of the Omni Boston Hotel at the Seaport, Chef Peterson will serve as a key partner in the opening of the hotel and five of its seven culinary establishments, as well as overseeing six chefs who add culinary richness to each restaurant.

In addition to his guidance in the hotel’s restaurants, Chef Peterson will also curate and orchestrate the food and beverage program for the hotel’s vast meeting and event spaces, as well as the in-room dining experience.

Mark Spadoni – Managing Director

April 14, 2021 – Longtime manager of a luxury resort, Mark Spadoni has been appointed Managing Director for The Omni Homestead Resort effective Monday April 12th. For the past 20 years, Spadoni has been General Manager of the AAA Four-Diamond Westin Savannah Harbor Golf Resort & Spa and Club in Savannah Harbor, which has led the team to top honors from Westin, Condé Nast Traveler, Golfweek and others.
